Cooking With Honey – Clubhouse Turkey Burgers With Honey BBQ Sauce

Below is my version/modification of Whole Foods’ AMAZING Clubhouse Turkey Burger recipe. Even if you don’t think you like turkey burgers you will love these! They are amazingly tender and juicy. You may never eat beef burgers again!!

Of course, the Honey BBQ Sauce is what makes them even tastier…

Yield: Serves 4

Ingredients:

1lb ground turkey

6 strips bacon (about 1/3lb), cooked & crumbled

1 cup shredded cheddar cheese

1/2 cup panko bread crumbs

1/4 cup Honey BBQ sauce (recipe follows) or your favorite BBQ sauce

salt & pepper

Buns

Toppings: red onion, tomato, lettuce, bbq sauce

Directions:

Mix together turkey, bacon, cheese, panko bread crumbs, BBQ sauce, salt and pepper in a large bowl then divide unto 4 parts and form into patties. Brush or mist one side of the burgers with extra virgin olive oil or nonstick spray then cook for 4-5 minutes on each side, or until cooked through, brushing or misting the uncooked side with more oil before flipping. Top with toppings and serve on toasted buns. Serve with extra BBQ sauce.

Honey BBQ Sauce

Yield:  3 1/2 cups

Ingredients:

2 cups ketchup

1 cup water

1/2 cup apple cider vinegar

1/2 cup honey

1/2 tablespoon fresh ground black pepper

1/2 tablespoon onion powder

1/2 tablespoon ground mustard

1 tablespoon lemon juice

1 tablespoon Worcestershire sauce

Directions:

In a medium saucepan, combine all ingredients. Bring mixture to a boil, reduce heat to simmer. Cook uncovered, stirring frequently, for 1 hour 15 minutes.

Cooking With Honey – Strawberries With Honey Rebecca Sauce

This is a traditional Kentucky Derby favorite. Enjoy the seasonal abundance of fresh strawberries with this heavenly sauce.

Yield:  6 servings

Ingredients:

2 quarts fresh strawberries

· 1 pint sour cream

· ½ cup honey

· 1 tablespoon vanilla

· 1 tablespoon dark rum, brandy or bourbon (bourbon makes a more Kentucky-tasting sauce)

Directions:

Wash berries. Drain on paper towels. Divide among 6 pretty bowls or plates.

Combine sour cream, honey, vanilla and rum or bourbon. Stir to mix well. Spoon over strawberries and serve.

L.J.’s Honey Hot Fudge Sauce

If you’ve been following my blog for a while, you’ve heard me talk about my mother, L.J.

“L.J”. is short for Lois Jean. I didn’t know what her real name was until I entered grade school.

I adored her.  She was blonde, beautiful, smart, funny, irreverent, and a fantastic cook.

I grew up in Louisville, where cooking is an art form. My mother was legendary. Our friends and relatives still rave about her dinner parties and holiday buffets.

I’ve posted many of her recipes, the most popular ones on my blog. I’ll be posting her Easter Menu in a day or so.

But her Hot Fudge Sauce… She used to tell me it didn’t have any calories. I desperately wanted to believe her. It is so darn good!

I think of her every day and wish she were still around to help me tend my bees, garden and cook.

She lives on through her recipes though. Especially the one for Hot Fudge Sauce.  🙂

Honey Hot Fudge Sauce

Ingredients

1 12 ounce bag of  semisweet chocolate chips . (L.J. used Nestle’s but I like Ghirardelli.)

1/2 cup heavy cream

1/4 cup honey

Directions

Place the cream into a microwave glass bowl.  Add the chips and microwave for 2 minutes. (L.J. used a double boiler. Feel free to use one too!)

Remove from microwave and stir.

Add honey and stir.

Refrigerate until cold or reheat for hot fudge sauce.

Serve over ice cream.  Whipped cream may be added, but is superfluous. 🙂

The Goddess’s Honey And White Chocolate Lava Cake With Honey Raspberry Sauce

Yield:  5 servings

Ingredients:

6 ounces white baking chocolate

1/2 cup butter (1 stick)

2/3 cup honey

2 teaspoons vanilla

4 egg yolks

4 egg whites

3/4 cup flour

Directions:

Preheat oven to 350 degrees F.

Grease 5 ramekins with butter, set aside.

In a medium saucepan over medium-low heat, melt the butter and white chocolate.

In a large bowl, combine 1/3 cup of the honey and vanilla. Pour in the melted butter and chocolate and stir until combined.

Mix one egg yolk at a time into the sugar mixture, ensuring each yolk is fully combined with each addition.

Using your stand mixer and whisk attachment, beat the egg whites on medium until foamy. Slowly add the remaining 1/3 cup of honey and continue whisking until stiff peaks form.

Fold half of the beaten egg whites along with half of the flour into the chocolate mixture. Gently fold until combined.

Add the remaining half of the egg whites along with the remaining flour and fold gently until combined.

Divide the white chocolate lava cake batter between the ramekins, filling each ramekin 3/4 to the top.

Put in the oven and bake for 10 to 12 minutes – check frequently and do not overcook as this will result in the centers being too solid.

The lava cakes are done baking when the outer edges around the top are firm but the center still jiggles.

Remove from the oven and allow to cool for 5 minutes.

Loosen the cake edges with a knife if necessary and turn each ramekin upside down to place the cakes onto serving plates.

Cut each white chocolate lava cake from the center outwards, allowing the inner filling to spill out.

Garnish with Honey Raspberry Sauce (recipe below) and whipped cream. Serve immediately.

Honey Raspberry Sauce

Cover 12 ounces of frozen raspberries with honey and allow to thaw. The raspberry juice and honey will combine to form a delicious sauce.  Serve over cake, ice cream or yogurt.

The Romancing The Bee Diet – Day 13 – Buffalo Chicken Tenders

These are just as good as the real thing!  The honey mellows out the overwhelming vinegar taste of the hot sauce.

I’ve lost five pounds!!

Yield: 6 servings

Ingredients

3 pounds skinless, boneless chicken tenders

1 1/2 cups Frank’s RedHot sauce

Tabasco Sauce to taste

4 tablespoons unsalted butter

2 tablespoons honey

blue cheese crumbles

Directions

Heat oven to 400 degrees F.  Line a rimmed baking sheet with foil and place chicken tenders on it. Bake until just done, 10-12 minutes. Do not overcook.

Meanwhile, combine the hot sauce, butter and honey in a medium pot over medium heat until the butter melts. Add Tabasco as desired for hotter sauce. Continue to cook, stirring, until the sauce thickens slightly, about 10 minutes.

After the chicken is done, remove from oven and brush generously with sauce on both sides.  Serve with celery sticks and 2 tablespoons blue cheese crumbles.

Holidays With Honey – Potato Zucchini Croquettes With Honey Mustard Dipping Sauce

Few things are more satisfying than fried potato and zucchini.  An awesome holiday appetizer!

Yield:  20 to 24 pieces

Ingredients

2 russet potatoes (about 1 pound)

1 1/2 cups grated Cheddar

1 medium zucchini

1/4 bunch chives

Salt

Fresh ground pepper

1 egg

Vegetable oil for shallow frying

2 cups fresh or dry bread crumbs

Honey Mustard Dipping Sauce:

1 cup whole grain-style Dijon mustard

1/4 cup honey

Directions

Place potatoes, in their skins, in cool water. Bring to a boil, then simmer until they can be pierced with a skewer, offer no resistance, and slides off easily. Remove from the water and cool completely.

With a table knife, remove the skin from the potatoes and grate on the large holes of a box grater, into a bowl. Also, through the small holes, grate the zucchini. Chop or slice the chives finely and add to the bowl. Add the salt and pepper, to taste, along with the egg. Combine mixture well and form into patties or a log shape.  If making a log, cut into 2-inch oval pieces. Dredge in the bread crumbs. Place on a plate until ready to cook.

In a saute pan, heat 1/4 to 1/2-inch of vegetable oil, add the croquettes, a few at a time. Don’t crowd them. Fry until the bread crumb crust begins to brown. Remove to a paper towel lined plate when cooked, to drain. Repeat process with the remaining croquettes. Serve warm.

Combine the mustard and honey and serve as a dipping sauce for the croquettes.

Cranberry Week – Honey Whole Cranberry Sauce

Ingredients

  • 1/4 cup freshly squeezed orange juice
  • 1/4 cup 100 percent cranberry juice, not cocktail
  • 1 cup honey
  • 1 pound fresh cranberries, approximately 4 cups

Directions

Wash the cranberries and discard any soft or wrinkled ones.

Combine the orange juice, cranberry juice and honey in a 2-quart saucepan over medium-high heat. Bring to a boil and then reduce the heat to medium-low and simmer for 5 minutes. Add the cranberries and cook for 15 minutes, stirring occasionally, until the cranberries burst and the mixture thickens. . Place in the refrigerator for at least 6 hours and up to overnight.

Remove from the refrigerator and serve.
